Does anyone else’s mom have “the good pans"? You know, the set that only she’s allowed to touch. That no one, not even fully-grown adults are allowed to use? Just me?
My mom sprang for a classic set of Le Creuset cookware way back when, and to this day, they’re her culinary pride and joy. Growing up, I envied those pans. But I swore to myself that I’d never become her. I would never hold cookware hostage for my own use.
And then I ordered a GreenPan Valencia set… and it was so good, I wanted to keep it a secret!

My initial reaction to using my Valencia set was simple: “I. Love. These. Pans.” The first time I cooked on them felt like a revelation – eggs were sliding, pancakes were flying, cleanup was a breeze. But there was a bit of a problem with my “don’t you dare touch my beautiful new toys” approach to pan ownership: the main reason I got my Valencia set was because I learned that my old nonstick pans were toxic.
You see, that coating on your regular ol’ set of nonstick pans that makes them so nonsticky… that’s PFAS*, a forever chemical. And every time you scratch that coating up or get it too hot, you’re ingesting or inhaling toxins that stay in your body… forever.
Part of what I loved so much about my set from GreenPan was that they don’t use PFAS* when making their nonstick. So you can do all your cooking on it without ever worrying about feeding your family toxins.
Except… I was the only one allowed to cook on the pans. And my old pans were toxic. And 1 + 1 = me doing all the cooking.

It was hard to give up total control of the Valencia set, but I’m glad I did. One unexpected outcome is that my kids are starting to really like cooking – and even mastering a few edible dishes! – with these pans. I love watching them gain more independence in the kitchen, and I’m relieved they’re no longer being exposed to PFAS* and the other chemicals in our old nonsticks.
